Amaranth
Amaranth is a very popular food source in Africa, Asia and South
America. The Amaranth seed is made into a flour which is high in
protein and contains Lysine and Methionine, two essential amino
acids. It is a good source of dietary fiber, iron, magnesium,
phosphorus, copper, and  manganese.
Potato
A staple in many western diets, this high-carbohydrate vegetable
contains a number of important vitamins, minerals and
phytochemicals, and has a fibre content equal to many whole
grain breads and cereals.
Tapioca
Tapioca is a flavorless, colorless, odorless starch extracted from a root
crop. It is a staple food in many regions. Also known as cassava and
arrowroot.
Quinoa
Quinoa is an edible seed that is fast becoming very popular, especially
for people interested in increasing their protein intake. Quinoa is a
complete protein as it includes all nine essential amino acids, and is
 a good source of magnesium, iron, copper and phosphorous.
